El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

PIC stated that the Salsa was chilled and removed from the refrigerator around 6 AM; and placed in the ice bucket for almost 4 hours. Cold air must flow around product to remove the heat. -Pf - Observed fried beans (93F) cooling in the tall; deep bucket; and the food surface was higher than the ice tub cool line. The cooling time was almost 2 hours; with bean temperature above 70F. CDI - the beans reheat to 165F for 15 seconds; then restart the cooling process with a smaller portion that has the same level of ice tub cool line. - Walk-in cooler: fried beans cooled in the tall; deep bucket since last night.
