According to Person-in-charge noted food items were cooked prior to inspection and immediately transferred to work top cooler. Cool time/temperature control food (TCS) in rapid cooling equipment. Discussed cooling food in the walk-in cooler prior to transferring to work top cooler. Use methods such as open/vented shallow pans or large ice bath. Cold air must flow around product to remove the heat. CDI- PIC transferred items to walk-in cooler to cool down. This is repeat from last inspection.
