Corrected During Inspection - Facility was actively receiving a delivery at the time of inspection and were also in and out of the walk in cooler for prep; therefore door was opened and closed frequently. Temperature of walk in cooler adjusted back down to 41 F. Ice was supplied to food products in low boy in order to maintain 41 F or less. PIC stated that these products will be removed from this location between lunch and dinner shifts in order to keep them colder. Discussed possibly lowering the temperature of this unit as employees are in and out of it frequently during service.

TCS (Time/Temperature Controlled for Safety) foods shall be cooled from 135F to 70F in 2 hours and from 70F to 41F within 4 hours. Roast was not properly cooled from night previous and did not reach cooling times. Corned beef voluntarily discarded during inspection.

Slicing into smaller; thinner portions; placing into shallow pans; ice bath and stirring frequently; ice wands; using rapid cooling equipment like walk-in freezer; loosely covered or uncovered if protected from overhead contamination. Corned beef voluntarily discarded during inspection. Ensure foods reach cooling parameters by following appropriate methods.

Cleaned equipment shall be stored in a self-draining position that allows air drying. Dishes arranged to allow for air drying during inspection. Full points taken for repeat.

Nonfood-contact surfaces of equipment shall be kept free of a buildup of dust; dirt; food residue and other debris. Employees began cleaning these areas during inspection.
