The day of preparation shall be counted as Day 1 (ex.-date the milk opened; date the meat/vegetable cooked). Add date mark to prepared TCS foods that will be held over to the next day. When freezing cooked TCS foods; include the Date Cooked or precooked item opened/Date Frozen/Date Thawed. Prepared TCS food shall be discarded if it exceeds the temperature and time combination as specified in Food Code (up to 7 days when maintained at 41F and less). Replace the cracked ice machine baffle. Replace the walk-in flooring plating. Repair/replace both the walk-in door handles. Repair the keg cooler threshhold.so smooth and cleanable. For improved cold-holding; Do not overstack TCS foods that are in pans in the top section of prep units; keep below the "fill line" of pan. Individual plastic pan lids are also helpful for improved temperature control in top sections of prep units. Recommend Reducing temperature of this unit. Use good cooling methods.

Noted ambient air for the unit was 43 F during inspection. The person in charge adjusted temperature gauge on noted unit and will have a technician check unit by the end of the week for repairs. Observed containers of sliced tomato and house-made salad dressing temping between 46-45 F in the Central flip-top unit. We discussed keeping the flip-top lid closed between uses to minimize the risk of cold air escaping from the unit. Ensure all TCS food items are held at 41 F or below for cold storage. CDI- Noted food items volutarily discarded or transferred to the walk-in cooler for cooling.

CDI- Food was transferred to the walk-in cooler for cooling.

Non-slip covering on the keg storage stairs is getting loose. Floor drain at dish machine is lacking cover. PHYSICAL FACILITIES shall be maintained in good repair. Repair the stairs to improve safety. [REPEAT] Replace the missing floor drain cover.

Increase Ensure all light bulbs in all fixtures are working properly to provide the required amount of lighting. Lighting should be at least 50 foot candles in all food prep areas; 20 foot candles at all hand sinks; beverage areas; dish washing areas and restrooms; and it must be at least 10 foot candles in all storage areas.
