    Nota del inspector (en inglés): 3-501.16 (A)(2) and (B); Priority; Cold-Holding: Raw chicken inside prep unit holding at 52-53F. When asked; PIC stated the chicken was marinated 2 hours ago at the Commissary and started at around 39-40F at that time. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- Recommend using small deep metal pans with plastic lids for TCS foods held in top section of prep unit (ex.- hummus; tziki). When marinating chicken; prepare the day before so enough time to cool back to 41F and less BEFORE PLACING ON THE TRUCK. Maintain TCS foods at 41F and less during transport to location; then continue to maintain at 41F and less during service. PIC returning to Commissary immediately with the chicken to ice bath and place in stronger cooler for fast chill.

    Nota del inspector (en inglés): 3-501.15; Priority Foundation; Cooling Methods: Cut tomatoes placed in top section of prep unit to cool; measured at 44F. The top section of a prep unit is for maintaining foods that are already cold at 41F and less. Ground beef in the tall unit with a few patties formed measured at 44.9F. When asked ; PIC stated the beef was purchaded from Restaurant Depot within the last 2 hours; and he formed some patties on the truck. Prepare foods at Commissary so ready to cook; and transport cold to maintain at 41F and less. Cooling shall be accomplished based on the type of FOOD being cooled: Placing the FOOD in shallow pans; Separating the FOOD into smaller or thinner portions; Using rapid cooling EQUIPMENT; Stirring the FOOD in a container placed in an ice water bath; Using containers that facilitate heat transfer (metal); Adding ice as an ingredient; or Other effective methods. CDI- The tomatoes moved to the lower section of the prep unit for faster cooling. The beef was all immediately cooked; to be verified to at least 155F; and then to be maintained hot at 135F or greater.
