A couple containers of beans and pasta sauce sitting up on top of other pans; not down in the unit; holding above 50F. In the below section of right prep cooler; potato salad holding a little too warm at 42.3F. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- TCS foods exceeding 41F but not over 45F moved to walk-in cooler for active cooling. TCS foods exceeding 45F voluntarily discarded by PIC during inspection. Have both prep units serviced (Left unit not holding proper temperatures; needs temperature reduced. Right unit check for proper air flow in lower section; top section is doing great.). Do not store TCS foods in the left prep unit (unless in ice bath) until the unit is fixed and can maintain food at the required 41F and less. When prep foods (roll-ups; etc.); let them cool back down to 41F and less before placing in the top section of a prep unit.
