Upon entry; PIC observed placing hot chicken wings in the reach-in cooler. Temperature of the wings measured 145 F using EHS's calibrated thermometer. Once 135 F or less is reached foods shall be cooled using rapid cooling equipment (walk-in cooler/freezer). Move chicken wings to the walk-in cooler/freezer once 135 F or below is reached; not prior to. Wings may be stored at room temperature for a short amount of time following cooking to cool to 135 F; then rapid cooling equipment shall be utilized. Do not use the reach-in cooler for this purpose as the temperature of the cooler and foods will rise. CDI - Wings moved to cool in the walk-in cooler.
