Multiuse food contact surfaces shall be smooth and free of breaks; open seams; cracks; chips; inclusions; pits; and similar imperfections. Corrected During Inspection - Advised PIC to discontinue utilizing these knives and replace them; as they are no longer smooth and cleanable. Discussed alternate utensils for coming into contact with fish.
