TCS (time/temp control for safety) food in cold holding shall be maintained at 41F or less. CDI - PIC voluntarily discarded foods above 41F. Issue possibly coming from a circulation issue as no cold air was felt from the top section vents. All TCS foods stored in the lower section of the makeline cooler were holding at adequate temperatures.

An air gap between the water supply inlet and the flood level rim of the plumbing fixture equipment; or non food equipment shall be at least twice the diameter of the water supply inlet and may not be less than 1 inch. CDI - Hose was moved up onto faucet to manually create an air gap. REHS strongly recommends cutting hose to create an air gap above the 3-compartment sink rim of at least 1 inch. Repeat.
