    Nota del inspector (en inglés): 3-302.11(A)(1) Separation; Packaging & Segregation; Raw animal food and Ready to Eat - P FOOD shall be protected from cross contamination (except when frozen in original commercial packaging) by separating raw animal FOODS during storage; preparation; holding; and display from READY-TO-EAT FOOD including other raw animal FOOD such as FISH for sushi or MOLLUSCAN SHELLFISH; or other raw READY-TO-EAT FOOD such as fruits and vegetables; and unwashed produce. - Walk-in cooler: observed that the shelf designated for employee food stored a container of raw shrimp on the shelf above unwashed produce. Corrected during inspection (CDI) - the raw shrimp were moved away from unwashed produce.

Educational provided.

Deductions not take due to this being the establishment’s first inspection.

    Nota del inspector (en inglés): 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P); Two containers of raw fish were being stored at 45F on the prep top of the sushi bar (possibly due to plastic covering separating the fish from the cooler. Potentially hazardous food being held cold shall remain at 41F or below. CDI- Plastic was removed and fish was placed in deep containers to cool before a 4 hour period elapsed.

Potentially hazardous food being held on TPHC shall be marked with the time they were removed from temperature control to indicate when they must be discarded within a 4 hour period. CDI- Time markings were placed on rice.
