The food handler stated the cooked eels were placed in the oven within 30 minutes. CDI - the cooked eels were restored in the prep cooler to cool them down. Repeat.

After being cleaned in a mechanical dish machine; equipment food-contact surfaces and utensils shall be sanitized in the dish machine by achieving a utensil surface temperature of 160F. Verification Required- EC will return on Thursday; February 20; 2025 to verify that the dish machine is sanitizing properly. In the meantime all dishes shall be washed in the 3-compartment sink. 4-601.11(A); Priority Foundation; Sticker residue observed on several of the dishes being store as clean. Equipment food contact surfaces and utensils shall be clean to sight and touch. CDI- dishes were sent back to be cleaned.
