CDI - Cloth was submerged and bucket was placed on a bottom shelf.

CDI- Cilantro was removed from Styrofoam container and placed in food-grade plastic bags. Shrimp was placed in approved food container for continued thawing. 4-101.19; Core; Cardboard was used as lids for large food containers in the walk-in cooler. Nonfood-contact surfaces of equipment that are exposed to splash; spillage; or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant; nonabsorbent; and smooth material.
