El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

Nota del inspector (en inglés): 3-501.14; Priority; Batch of rice was cooked and removed from oven around 2:40p and placed at expo area. At 4:40p; the temperature of the rice measured 84F-85F. Time/Temperature Control for Safety (TCS) foods shall be cooled from 135F to 70F within 2 hours and from 70F to 41F or less within 4 additional hours. CDI- Rice was voluntarily discarded. Nota del inspector (en inglés): 3-501.15; Priority Foundation; Batch of rice was left to cool at room temperature for 2 hours. When cooling hot foods; use any of the following methods: shallow containers with 2 to 4 inch food depth; reduction in food quantity; use of rapid cooling equipment (such as ice wands/paddles); use of ice-water baths with ice-water at level of food in containers and frequent stirring of food and/or cooling in walk-in cooler or freezer. Remember that hot foods must cool rapidly from 135 degrees F to 70 degrees F within 2 hours and from 70 degrees F to 41 degrees F or less within 4 additional hours. Use calibrated metal stemmed food thermometer to ensure proper cool down. Once foods have cooled to 41 degrees F or less; they may be transferred to large containers and tightly covered. (1)Asterisks are attached to chicken items denoting that these items may be offered undercooked but from further discussion; PIC stated that chicken is always served fully cooked regardless if customer requests undercooked chicken. (2)The disclosure is missing for the consumer advisory statement. Asterisks are present for beef and salmon but statement (These items may be served undercooked or may be cooked to order) is missing. Facility has correct reminder statement (Consuming raw or undercooked meats; poultry; seafood; shellfish; or eggs may increase your risk for foodborne illness). If an animal food such as beef; eggs; fish; lamb; milk; pork; poultry; or shellfish is served or sold raw; undercooked; or without otherwise being processed to eliminate pathogens; either in ready-to-eat form or as an ingredient in another ready-to-eat food; the permit holder shall inform consumers of the significantly increased risk of consuming such foods by way of a disclosure and reminder. Nota del inspector (en inglés): 4-101.17; Core; Wooden boards observed on shelving above prep cooler. When asked; PIC stated that these wooden boards are used for direct food contact (charcuterie). Wooden cutting boards have minor cracks toward edges due to continued dishwasher use. Wood and wood wicker may not be used as a food-contact surface. CDI- PIC agreed to discontinue using the wooden boards and will be obtaining approved boards for charcuterie.
