Deli prep cooler has not been functioning and deli meats were last used on 2/18 and have not been used since that date. A food shall be discarded if it is appropriately marked with a date or day that exceeds the 7 day hold at 41F or below. CDI- All foods were voluntarily discarded during the inspection.

PIC stated that this cheese was prepped out on Monday for taco day. All other datemarks on food in facility were labeled correctly and were within the 7 day hold. Refrigerated; ready to eat; TCS food shall be clearly marked; at the time the original container is opened in a food establishment and if the food is held for more than 24 hours; to indicate the date or day by which the food shall be consumed on the premises; sold; or discarded. CDI- Datemarking was allowed to be added during the inspection.

According to employee; pasta was cooled in an ice bath; but temperature was not verified prior to placing in prep cooler. Food shall be cooled by placing the food in shallow pans; separating food into smaller or thinner portions; using rapid cooling equipment; using ice as an ingredient; or other effective methods. Ensure foods are cooled down to 41F prior to placing in cold hold units. CDI- Foods were placed in rapid cooling equipment and observed a cooling rate that met cooling parameters.
