Nota del inspector (en inglés): 3-501.18; Priority; Disposition: Date-marking missing on an opened container of cow milk and a container of heavy cream in server prep unit. When asked; PIC found the cream had been opened today and the cow milk was opened a few days ago. Refrigerated; READY-TO-EAT; POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURE CONTROL FOR SAFETY FOOD) prepared and held in a food establishment for more than 24 hours shall be date-marked. The day of preparation shall be counted as Day 1 (ex.-date the milk opened; date the meat/vegetable cooked). Add date mark to prepared TCS foods that will be held over to the next day. Prepared TCS food shall be discarded if it exceeds the temperature and time combination as specified in Food Code (up to 7 days when maintained at 41F and less). A couple scoops with handles down into the product in flour/sugar bins in storage corner. Utensils stored in water on the grill with the water at 109F. In basement storage area; ice scoop stored directly on top of machine; not on clean surface. During pauses in FOOD preparation or dispensing; FOOD preparation and dispensing UTENSILS shall be stored in the FOOD with their handles above the top of the FOOD; in water maintained at 135F and above; or In a clean/dry; protected location and changed out as needed. CDI- Utensils in water heated to 165F corrective. Ice scoop returned for cleaning. PIC directed to adjust the flour/sugar scoops or find different storage solution for the scoops. A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Cheese slices holding at 44F; bundle of pork at 50F. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- TCS foods exceeding 41F voluntarily discarded by PIC during inspection. Recommend using more metal pans for TCS foods in the top section of prep units. Recommend cooling kitchen space more (increased A/C may also help with clearing excess smoke in dining area.) Recommend using individual pan lids for harder to keep cool items like stacks of cheese and bundles of meats.
