PIC states when removing it; he is cooking to 165F but mentioned that this pan was cooling for a few minutes before going into the steam well. Another pan of chicken in steamwell at 104F. Food shall be held 135F or higher. Both pans of chicken returned to flat top grill to achieve 166F on batch and the other reached 170F. CDI

    Nota del inspector (en inglés): 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P) Small flip top prep table next to fry is not functioning properly and has ice accumulation in the back of the unit. Food that was stated to have been in the unit over night at 48F - 50F. Top portion of tomatoes stacked too high in makeline at 47F (39F in other portions) and grape leaves at the top of the stack 50F and 38F in other portions. Food shall be 41F or less. All food in the flip top prep table by fryer discarded. Top portions of the tomatoes and grape leaves removed and relocated to cool; they were placed in the unit this morning. Employees present are aware to not use the flip top prep table until it has been repaired. It has been unplugged and technician contacted and is arriving today. CDI

Two commercial packages of meat stored in rear hand sink by dish area and two large commercial packages of beef stored in sanitizer basin of three compartment sink. The commercial packages were still frozen and not in any running water. A large bucket of frozen falafel stored on clean drain board of three compartment sink to thaw. Food shall be thawed under refrigeration; in cool 70F or less running water and submerged or part of the cooking process. All foods returned to walkin. CDI

Store on bottom shelf or designated area where not a source of contamination.
