Chlorine sanitizer shall be 50 to 200 ppm. More concentrate added during inspection to reach 50 ppm chlorine. Test each batch of sanitizer made with test strip to ensure meeting the requirement. CDI **Dish machine not evaluated during this inspection due to PIC stating it is not currently being used and when it was turned on and ran for a cycle; a large amount of soapy bubbles was coming out of the unit. Have unit serviced to ensure the dish machine can be utilized.

Thaw under refrigeration; in 70F or less running water; or as part of the cooking process. Do not leave food on the counter to thaw.

PIC explained it was used like a cheese cloth for drying cucumbers and also to dry dishes going onto the rack. Clean equipment and utensils shall be stored in a clean; dry location; protected from contamination and in a self draining position. This material is not approved for food contact and dishes must be air dried prior to stacking and not dried with a cloth. Several cloths hanging on clean dish rack. 4-904.11 Kitchenware and Tableware - Preventing Contamination (C) Mouth portion and handles for silverware in basket stored in different directions. Clean utensils shall have the mouth contact portion protected from contamination. Store handles in same direction to not touch mouth part when grabbing handle.

Wood block (portion of 2x4) on grill stated to be used to keep the kabobs from touching the grill too much and getting stuck on the grill. Wood blocking used under the chest freezer on the floor. NonFOOD-CONTACT SURFACES of EQUIPMENT that are exposed to splash; spillage; or other FOOD soiling or that require frequent cleaning shall be constructed of a CORROSION-RESISTANT; nonabsorbent; and SMOOTH material. Remove wood that is not approved and utilize something designed for a commercial restaurant. Caster or an NSF rack or table can be used under the freezer. Replace residential shelving with NSF shelving.

    Nota del inspector (en inglés): 6-101.11 Surface Characteristics - Indoor Areas (C) Items that have changed since permitting and need adjusting to meet cleanability requirements: 1. Partition on top of counter kitchen side is rough and not easily cleanable - FRP can be added over top of the current MDF backing and edges made smooth with no cracks/gaps 2. FRP added on wall behind grill flip top prep tables has screws in it and where it meets other FRP panel is not a smooth transition - remove screws; fill holes; and add transition where they meet to ensure it is smooth and the top gap on the FRP needs addressing where it meets the wood at top. Caulk or add FRP trim to cover exposed sheetrock. 3. Floor tiles separating along the wall near the two hand sinks in the front kitchen. Repair tiles to not have gaps. 6-201.11 Floors; Walls and Ceilings - Cleanability (C) One ceiling tile near the ice machine was replaced with the type that have the holes and not easily cleanable. Ceilings and all coverings shall be smooth and easily cleanable. Change the tile to be the smooth; nonabsorbent tile like the others.
