Nota del inspector (en inglés): Outer openings of a food facility were not protected against the entry of insects and rodents. Observed gap at bottom of back door. Ensure doors are tight fitting. - Hallazgo Problemas de agua, plomería o drenaje

Nota del inspector (en inglés): The air gap between the water supply and flood level rim of a plumbing fixture (or other equipment) does not meet requirements. Observed plastic covering the pipe from the prep sink to the floor drain. Ensure an air gap is always present at the prep sink to prevent back flow and contamination. Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Reheated TCS food was not heated to 165°F or roasts were not properly reheated. Observed barbacoa and carnitas in hot holding unit at 110F. Person in charge noted items were brought over from the restaurant kitchen refrigerator cold a little over an hour prior and placed in the hot unit. Ensure to reheat to 165F before placing in hot holding units. Person in charge took items back to kitchen to be heated properly.
