Several food items in working containers were at 45° F. Ensure TCS foods were being held at temperatures >41° F. EHSIT discussed with PIC about replacing the lid of the cold holding units when not in use and using small working portions to help maintain adequate cold holding temperatures. PIC replaced the lids and food items returned to <41° F. +COS
