OBSERVED RAW CHICKEN AT IMPROPER COLD HOLDING TEMPERATURE INSIDE OF WALK IN COOLER AT 45F. ALSO OBSERVED CHEESE, BURGERS, PORK, CHILI AND CHICKEN WINGS AT IMPROPER COLD HOLDING TEMPERATURE RANGING FROM 45-47F. TCS FOODS MUST BE HELD AT 41F OR BELOW INSIDE OF A COLD HOLDING UNIT. FOOD DISCARDED VOLUNTARILY. FOOD WEIGHING APPROXIMATELY 30 LBS AT A COST OF $250.00. PRIORITY VIOLATION. 7-38-005. CITATION ISSUED.
