PROPER COLD HOLDING TEMPERATURES
OBSERVED STEAK AT IMPROPER COLD HOLDING TEMPERATURE AT 45F INSIDE OF 2-DOOR REFRIGERATOR. ALSO OBSERVED THE FOLLOWING TCS FOODS AT IMPROPER COLD HOLDING TEMPERATURE RANGING FROM 45-52F SUCH AS PASTOR, RAW CHICKEN AND CHORIZO. TCS FOODS MUST BE AT 41F OR BELOW INSIDE OF A COLD HOLDING UNIT. PRIORITY VIOLATION. 7-38-005. CITATION ISSUED. FOOD DISCARDED VOLUNTARILY. FOOD WEIGHING APPROXIMATELY 20 LBS AT A COST OF $200.00.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
