INSTRUCTED CURRENT PERSON IN CHARGE THAT A MANAGER WITH A VALID CITY OF CHICAGO FOOD CERTIFICATE MUST BE PRESENT DURING ALL HOURS OF OPERATION WHILE TCS FOODS SUCH AS COFFEE AND DAIRY DRINKS ARE HANDLED AND PREPARED.
