PROPER COLD HOLDING TEMPERATURES
OBSERVED THE FOLLOWING TCS ITEMS HELD AT THE STATED IMPROPER TEMPERATURES INSIDE PREP COOLERS LOCATED IN BOTH FIRST FLOOR PREP AREA AND BASEMENT PREP/DISH AREA: YOGURT AT 50.9F, YOGURT AT 52.5F, AND MILK AT 56.1F. MANAGEMENT DISCARDED APPROXIMATELY 50LBS OF PRODUCT VALUED AT APPROXIMATELY $200. INSTRUCTED TO MAINTAIN ALL TCS ITEMS AT OR BELOW 41F AT ALL TIMES. PRIORITY VIOLATION 7-38-005. CITATION ISSUED.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
