OBSERVED NO CONSUMER ADVISORY DISCLOSURE ON THE MENU FOR RAW OR UNDERCOOKED FOODS (SALMON, STEAK AND EGGS). MANAGEMENT INSTRUCTED TO LINK EACH FOOD THAT CAN BE ORDERED RAW OR UNDERCOOKED TO THE REMINDER STATEMENT WITH AN ASTERISK OR OTHER MEANS. PRIORITY FOUNDATION VIOLATION 7-38-005.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
