OBSERVED BUILD UP OF BLACK AND GRAY MOLD LIKE SUBSTANCE ON INTERIOR BOTTOMS OF COLD HOLD UNITS. INSTRUCTED PERSON IN CHARGE TO DETAIL CLEAN AND MAINTAIN.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

INSTRUCTED MANAGER TO REMOVE, CLEAN, AND SANITIZE ALL AREAS. TECHNICIANS ARRIVED ON SITE FOR MOLD ASSESSMENT DURING INSPECTION.
