FOOD-CONTACT SURFACES: CLEANED & SANITIZED
OBSERVED LOW-TEMPERATURE WAREWASHING MACHINE LOCATED IN THE BASEMENT KITCHEN'S DISH AREA NOT PROPERLY SANITIZING. THE SANITIZING RESIDUAL CONCENTRATION WAS OBSERVED AT 0 PPM AT THE TIME OF INSPECTION. INSTRUCTED PERSON IN CHARGE TO REPAIR TO MEET SANITIZING REQUIREMENTS OF 50-100PPM. THE DISH MACHINE WAS SERVICED BY ECOLAB DURING THE INSPECTION. PRIORITY VIOLATION #7-38-025. CITATION ISSUED.

THE MANAGER DISCARDED AND DENATURED A TOTAL OF 8LBS AT A COST OF $100. ALL COLD TCS FOOD MUST MAINTAIN 41F OR BELOW. PRIORITY VIOLATION. CITATION ISSUED 7-38-005.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
