PROPER COLD HOLDING TEMPERATURES
OBSERVED APPROXIMATELY 5LBS OF TCS FOOD (MARINARA SAUCE, COOKED CHICKEN) AT IMPROPER COLD HOLDING TEMPERATURES OF 48.5-48.9F. INSTRUCTED PERSON IN CHARGE THAT ALL COLD HELD TCS FOODS MUST BE AT 41F AND BELOW. PERSON IN CHARGE VOLUNTARILY DISCARDED AND DENATURED 5LBS OF FOOD AT A COST OF $30. PRIORITY VIOLATION #7-38-005. CITATION ISSUED.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
