PROPER COLD HOLDING TEMPERATURES
OBSERVED NUMEROUS OF TCS FOODS AT IMPROPER COLD HOLDING TEMPERATURE INSIDE OF PREP COOLER RANGING FROM 45-50F. FOODS SUCH AS 8 TUBS OF CREAM CHEESE, SALMON, SAUSAGE PATTIES, 7 PACKAGES OF SLICED SHARP CHEESE, 2 CASES OF LIQUID EGGS AND DELI MEAT ALL RANGING FROM AN INTERNAL TEMPERATURE BETWEEN 45-50F. TCS FOODS MUST BE HELD AT 41F OR BELOW INSIDE OF A COLD HOLDING UNIT. FOOD VOLUNTARILY DISCARDED. FOOD WEIGHING APPROXIMATELY 50 LBS AT A COST OF $400.00. PRIORITY VIOLATION. 7-38-005. CITATION ISSUED.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
