OBSERVED QUAT SANITIZER IN 3 COMPARTMENT SINK DISPENSING WITH A CONCENTRATION OF 0PPM. FOOD EMPLOYEES OBSERVED ACTIVELY WASHING DISHES. INSTRUCTED MANAGER TO ENSURE QUAT SANITIZER DISPENSES WITH THE APPROPRIATE CONCENTRATION. MANAGER MANUALLY ADDED SANTIZER. PRIORITY VIOLATION 7-38-025 CITATION ISSUED.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
