OBSERVED IMPROPER COLD HOLDING TEMPERATURES OF TCS FOODS ON THE SOUTHWEST SIDE OF FOOD DISPLAY. OBSERVED 14 CONTAINERS OF PROTEIN YOGURT AT 63-65F, 4 MIXED FRUIT CONTAINERS AT 51-54F, AND 3 CONTAINERS OF CHICKEN TENDER BACON WRAPS AT 56-57F. INSTRUCTED TO DISCARD AND DENATURE ALL SAID TCS FOODS AND TO MAINTAIN ALL COLD HOLDING TCS FOODS AT 41F OR BELOW AT ALL TIMES. MANAGEMENT DISCARDED ALL SAID TCS FOOD ITEMS. ESTIMATED COSTS OF SAID TCS FOODS APPROX $142. PRIORITY VIOLATION, 7-38-005. CITATION ISSUED.
