PROPER COLD HOLDING TEMPERATURES
3-501.16(A:2,&B) OBSERVED TIME/TEMPERATURE CONTROL FOR SAFETY FOOD (ABOUT 10 BOTTLES OF MILK, ABOUT 100 SMALL PACKAGES OF LIQUID DAIRY CREAMER) INSIDE OF A REFRIGERATION UNIT AT INADEQUATE COLD HOLDING TEMPERATURES. AT THE TIME OF THE INSPECTION, TCS FOODS WAS AT 58F. INSTRUCTED TO DISCARD AND DENATURE SAID TCS FOODS AND ALWAYS MAINTAIN ALL TCS FOODS AT 41F OR BELOW AT ALL TIMES. THE MANAGER DISCARD ABOUT 20 LBS OF DAIRY. PRIORITY VIOLATION. CITATION ISSUED 7-38-005.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
