TCS FOODS MUST BE HELD AT 41F OR BELOW. FOOD DISCARDED AND DENATURED. FOOD WEIGHING APPROXIMATELY 50 LBS AT A COST OF $300.00. PRIORITY VIOLATION. 7-38-005. CITATION ISSUED.
