OBSERVED IMPROPER COLD HOLDING TEMPERATURES OF TCS FOODS INSIDE OF THE PREP COOLERS. OBSERVED EGGS AT 45F, CREAM CHEESE AT 56F, BEAN BREAD AT 51F AND WHIPPED TOPPING AT 51F. MANAGEMENT INSTRUCTED TO MAINTAIN ALL TCS FOODS BELOW 41F. PRIORITY VIOLATION 7-38-005. CITATION ISSUED.
