OBSERVED THE FOLLOWING COLD TCS FOODS @ IMPROPER TEMPERATURES DURING THE INSPECTION. THEY ARE AS FOLLOWS... APPROXIMATELY 25 LBS COOKED CHICKEN INSIDE COOLING UNIT UNDER GRILL @50F, APPROX 30 LBS COOKED PORK @49F STORED INSIDE WALK-IN COOLER, APPROX 4 LBS DICED TOMATO @48F STORED INSIDE COLD HOLD UNIT, AND APPROX 2 LB GUACAMOLE @50F STORED ON PREP TABLE. INSTRUCTED TO HOLD ALL COLD TCS FOODS @41F AND MAINTAIN. PER THE PERSON IN CHARGE, ALL SAID ITEMS WERE VOLUNTARILY DISCARDED. PRIORITY VIOLATION.# 7-38-005. CITATION ISSUED.
