OBSERVED EMPLOYEE DRINKING FROM UNCOVERED BEVERAGE CONTAINER IN MAIN KITCHEN AREA WHILE PREPARING FOOD. INSTRUCTED EMPLOYEES ONLY TO DRINK IN DESIGNATED AREAS TO PREVENT POTENTIAL CONTAMINATION OF FOOD, EQUIPMENT, OR SINGLE-USE ARTICLES AND MAINTAIN AT ALL TIMES.

OBSERVED COOKED BEEF ON MAIN KITCHEN AREA PREP COUNTER THAWING AT ROOM TEMPERATURE. INSTRUCTED TO THAW TCS FOOD ITEMS WITH APPROVED THAWING METHODS SUCH AS UNDER REFRIGERATION OR UNDER RUNNING WATER AT 70.0F OR LESS AND MAINTAIN.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

PRIORITY FOUNDATION VIOLATION. 7-38-020(A) CITATION ISSUED.
