PROPER COOLING TIME AND TEMPERATURE
Proper cooling method not used for TCS food. (carnitas 62 F, walk in cooler, cooked and cooled on 5/10, per person in charge) -corrected when disccarded (person in charge stated he would divert the carnitas to his home for personal use)
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
