TCS food not maintained at 5°C (41°F) or below. (TCS foods in walk-in units (2) 48-60 F, in the back building) (Shrimp and Salmon reach in cooler main kithcen 48- 50 F)- corrected, discarded. Corrected discarded TCS foods prepped before 9:30 am o 7/10/26 (TCS foods prepped after 9:30 am on 7/10/26 moved to a working walk-in cooler) Operator issued order not to use the walk in units in the back building to store TCS foods until it is repaired and can hold TCS foods at 41F or below.
