PROPER COLD HOLDING TEMPERATURES
TCS food not maintained at 5°C (41°F) or below. (deli meats and cut tomatoes being double panned in roll top coolers holding between 48F-52F; food had not been there longer than 2 hours, food was removed from the double pan and temperature was decreasing; lower portions of the roll top coolers were holding at or below 41F)
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
