majorCode 590.004/4-303.11-PFCleaning and sanitizing

Official wording

Cleaning Agents and Sanitizers Availability (Pf)

Inspector’s notes

At the time of the inspection I used the sanitize strips to test the 3 bay sink and sanitizer buckets. The results were blank. Observed at the 3 bay sink that the sanitizer bottle had a small amount inside the bottle. Spoke to the PIC and stated to make sure that you are using the test strips and to keep an eye on the bottles. PIC called the store manager to drop off the sanitizer. The establishment does have bleach and understand if they do not recieve the sanitizer today to use the bleach. They also have chlorine test strips.

In plain English

Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

Observed worn grout lines throughout the establishment. Grout lines need to be re-done to ensure no food and water stay in between the tiles. Remove the refrigeration #1 and #3 from the wall and clean and sanitize the floors.

In plain English

Floors, walls, ceilings, lighting, ventilation, or garbage areas needed repair or cleaning. These are usually less urgent than food-handling problems but still need to be fixed.
