Meatballs in holding between 119F and 124F. PIC will need to besure all foods are at 135F in hot holding. Foods that are reheated will need to be reheated to 165F before being put into hot holding unit. Chili was just at 135F. Please review with staff.

We put the dish in the machine and it was 167F at the plate. PLease have one set of gauges that will give the temperature of the machine. Sanitize container was replaced at this time. Not sure it going to be needed it a high temp. Also please have a plumber repair the leak in the wash bay and the fauset at the three bay sink. 10-10-24 PIC will need to have repairs made to the three bay sink and fauset. The dishwasher was addressed and is now showing 50ppm.
