Separate raw animal foods from ready-to-eat foods.
Inspector’s notes
Raw Shell eggs were observed stored above packaged orange juice at the time of inspection in the Dairy Reach In Cooler. Discussed with owner that the shell eggs and any other raw animal product need to be stored on the bottom shelves of the units so that they do not contaminate the other foods if packages leak. Store raw animal products below food products to prevent potential contamination.
In plain English
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.
