Observed cooked cauliflower, mushrooms and pork cooling in deep pans. Confirmed stock times. Chef immediately removed from walk-in and had staff place on sheet pans for rapid cooling.

Observed fresh sanitizer bucket to contain 0ppm sanitizer solution. Dispenser checked and found operating. Discussed rinsing detergents from cloths when first using and/or ensure dispenser has a chance to bring up the sanitizer solution when first being used for the day.
