Water was observed pooling at the bottom of the inside of the Prep Cooler. Discussed with Person In Charge that this should be cleaned and maintained clean so that the foods in the bottom of the unit are not at risk of being contaminated. Repair unit and ensure that it does not leak water onto the floor. Maintain equipment in good working condition at all times.

The ice machine was observed with water inside the ice basin. This could indicate a leak or malfunction in the machine. Drain the ice machine, remove ice, clean and see if that removes the water from the bin. If it does not and water seeps back into the bin, order a repair on the ice machine. Keep ice machine in good repair so that it is functioning according to manufacturer instructions.
