Keep all cold TCS foods at 41 degrees F or colder under mechanical refrigeration.
The walk in cooler had some foods that were above 41F (43, 44F) . This unit will be adjusted and monitored and repaired if necessary.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Although proper and thorough date marking was occurring, a container of wild rice was observed in the cooler dated 1/15 (29 days). It needed to be discarded after 7 days. Talk to your staff and ensure that they understand proper date marking and discarding.
