There was no quat sanitizer test kit available for the 3 basin sink quat sanitizer at the time of inspection. Provide test kit so that staff can monitor and change sanitizer sink and buckets when they drop below the effective level. Maintain quat sanitizer test kit on site at all times.

Mount the spray arm so it cannot hang below the spill rim of a sink or provide an approved backflow prevention device on the faucet.
Inspector’s notes
Dishwashing spray arm was observed hanging below the flood rim of the 3 basin sink. This can provide a cross connection between the fresh water supply of the hose and the wastewater supply in the sinks in the event of a septic backup. Raise spray arm so that there is an air gap between the flood rim of the sink and the spray arm nozzle. Maintain an air gap between these two parts at all times to protect fresh water supply.
In plain English
