minorCode MN Rule 4626.0300ACleaning and sanitizing

Official wording

Store all food: • In a clean, dry location • At least 6 inches above the floor

Inspector’s notes

Observed grocery store items such as vegetables and other packaged food exposed to water droplets dripping from the condenser unit. Water is being collected by a small bucket, however, food has the potential to be contaminated due to potential splash or overflow. Remove food items and keep the shelving area clear until the walk-in cooler has been serviced.

In plain English

Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.
