majorCode MN Rule 4626.0390AFood temperature

Official wording

Use effective cooling methods to cool TCS foods.

Inspector’s notes

Rice that was being cooled was in a large container about 6" thick. This is not likely to be able to meet the cooling requirements of cooling from 135F to 70F in 2 hours and down to 41F in another 4 hours. This was immediately corrected and the process will be revised.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
