criticalCode MN Rule 4626.0395A2Food temperature

Official wording

Keep all cold TCS foods at 41 degrees F or colder under mechanical refrigeration.

Inspector’s notes

Cream cheese spread (71F) and dairy butter (74F) were observed being kept out at room temperature on the counter top in the dining area at the time of inspection. These products are dairy based and the cream cheese spread has instructions on container to refrigerate after opening. Butters were observed stored in the Walk In Cooler. Discussed placing a small amount of products out during breakfast service and using it under a Time as a Public Health Control (TPHC) Plan. Provided plan with emailed report. Maintain all cold TCS foods at 41F or lower at all times for safety or use under Time as a Public Health Control Plan.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
