Inspector’s notes

The dish machine’s wash-cycle temperature gauge was not functioning properly and did not display the required minimum 160°F wash temperature per the manufacturer’s data plate. The manager on duty was advised that the gauge must be serviced or replaced in accordance with manufacturer specifications and was reminded that this issue has been a recurring or ongoing violation for several years. Per City policy, a minimum $200 repeat-violation citation will be issued if the issue is not corrected by the next inspection date. The citation amount will double each time this violation reoccurs within the next 24 months.
