No method of confirming dish machine rinse temperature was available. Thermolabels were left with the operator more will be ordered or a max registering thermometer will be ordered.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Inspector’s notes

The dish machine guage was not accurately reading the wash and rinse temperatures. The thermolabel confirmed that the plate temperature was at least 160F achieved with a rinse temperature of 180F or higher but the guage was not showing the correct temperature. This should be repaired. The shelving in many of the prep table coolers were showing signs of rust and paint chipping. These were immediately replaced wth shelving from another prep table cooler that was no longer in use. The bar dishmachine was out of operation but is scheduled to be repaired. Dishes are being washed in the main dishroom at this time.

One of the beverage dispensing nozzles had a slight build up of mold in it, but it was immediately cleaned. Be sure to disassemble the dispensors when cleaning to ensure that they are thoroughly cleaned each night.
